For me, it's all about the water chestnuts. Chicken, beef, tofu; broccoli, bok choy, carrots, baby corn; soy sauce, fish sauce, orange juice-based sauce; all these things are good in a stir fry, but all are next to nothing without the wonderfulness that is water chestnuts.

When I was a little girl and would be in the kitchen "helping" while my dad made dinner, if he was making stir fry he would have to open 2 cans of water chestnuts to ensure that one made it into the stir fry.

Water chestnuts and snow peas are more or less equally important. And getting the broccoli to just the right tenderness.
