You CAN get an accurate count after they're hatched. All you need is super glue or a staple gun to keep them from moving around.
(Edited so it sounded like it did in my head, which is different than what I typed out.)

Or, you could do the thing I did when I was little while visiting my great grandma. Which was to take chicken after chicken, and hold them until they stopped moving.
