They're in the oven now. Two of them. Mmmmm.

Hubby's birthday was yesterday, and the only thing he asked for was one of these for himself, and one for his best friend.

Looks tasty. I am going to have to make one to enhance my Olympic viewing experience.

They're very tart. Great if you like tart, but if not, reduce the juice to taste to as little as 2 1/2 oz per pie. Any less and it won't congeal properly.

Boon, is your last name Prince?

My paternal grandmother's maiden name was Sarepta Prince. She married Val Baker Jennings.

Karl, I'm related to some princes. My grandmother's sister married Fred Prince, and their children were Eva and Jim. Jim died when he was 41, but he left seven kids. They lived in Washington state. Any relation?

Not sure. I don't know that much about her side of the family. [Frown]

I could ask my dad, but that would require initiating contact with him and I'm not quite that curious.

That looks so good. I think I'll have to try it, though it won't be with Key West limes. Is there much of a flavor difference between Key West limes and other limes?
