I've been thinking of reading 1001 Arabian Nights and was wondering if anyone recommended a certain version. Most of the versions on Amazon are abridged and don't even contain all 1001 stories.

Yeah, and most of the non-abridged versions are so heavily bowdlerized they might as well be abridged.
Burton's unabridged, unbowdlerized version looks to be the way to go, but I don't see a cheap copy. He also made a number of abridged collections, and has been used as the basis of a number of bowdlerized versions, so be warned.
I'd suggest talking with some rare/used booksellers in the area. They can probably get you a better deal.

Wow, the first looks like some kind of rare edition. They only have one copy and it's $250.

Not particularly rare, no, its just large and old. That's either 10 volumes or 16 volumes (depending on if they include the Supplemental Nights). Even with only 10 volumes, that's only $25 a large, old, hardcover book. Pretty reasonable.

I'm pretty sure it is available on project Guttenburg, which is usually a great place to start looking when you want to find works that are out of copyright.
