Recently I've developed a hankering for soups and stews. I don't know why.

So, I thought I'd petition the Hatrack community for some soup and stew recipes that you think are good.

I've got a pot. I've got water. I've got time.

Now I want stewie goodness!

Pumpkin soup.

Pumpkin, cooked until mushy, in coconut milk. Add salt, pepper, and cumin to taste. Blend until smooth.

Enjoy!

Simple recipe, yes, but very very very nice. [Smile]

My beef stew recipe:

This will make a fairly large pot of stew.

3 1bs beef. Nothing special required.
3-4 large potatoes.
1 lb bag of baby carrots. No skinning or cutting required!
6 stalks of celery.
1 large onion.
1 tsp oregano.
10 bay leaves.
1 4 oz can tomato paste.
3 beef bullion cubes. A can or two of beef broth would also probably work.
1 can or bottle of beer. Your choice.
Salt and pepper.
Flour.

Take the beef and cube it. The pieces should be between 1" cubed and 1.5" cubed. The bigger the pieces, the longer it will take to cook.

In a plastic bag, combine 1 tsp each salt and pepper. Add several large spoonfuls of flour. Take your beef and roll the pieces around till they're easily coated.

Brown the meat in a large pot on medium or so heat. This will take some oil and a bit of time, but stir it up regularly because the flour will burn easily.

When the meat is browned, add enough water to cover the meat then add in the beer. I like to use Guinness for color and flavor, but it's up to you. Dice up 3 stalks of celery and half the onion and add that in. Also add the bay leaves, oregano, and beef bullion. Bring to a boil, then reduce heat, cover and simmer.

Skin and cube the potato, larger than the meat. After the meat has been simmering for half an hour to 45 minutes, throw in the potatoes and carrots. Add in the tomato paste too.

Slice up the remaining celery and onion into bite sized pieces and, once the potatoes and carrots are pretty soft, add them in.

Salt and pepper to taste.

Nothing more to it than that? I just told my mom about it and she's curious as to how much of what you should use.
