One of the cool features on a lot of forums is that they show who the last person to post in a topic was. On Hatrack, all we see is the topic starter. Is the UBB software configurable for things like this? Does anyone know if there's a reason why Last Poster doesn't show?

It does...on the first screen.

You're half-way there. Go to the main page, and choose Today's Active Topics (on the right, just above the current number of registered topics). Et voila, most recent poster and the first line or two of their post.
