If anyone else here gardens and is wondering what to do with the extra zucchini from your crop, try this:

zucchini bread recipe

It's quite unique; it has curry powder, crystallized ginger, lemon zest and poppy seeds in it. I reduced the amount of ginger by half and don't think I'd want any more than that in it. I also reduced the curry powder by about a third because I just wasn't sure if I'd like it. I did add in a few dashes of some other sweet spices (cloves, cardamom, coriander, allspice, nutmeg), but still less than the total amount of curry powder called for.

It is really delicious, sort of a spicy gingerbread flavor. Yum.

Thanks! I'm always looking for new ideas.

My current favorite zucchini bread recipe calls for honey instead of sugar, and I love the texture it gives.

But I will give this a try! (although, I might leave out the nuts. I don't like nuts in my breads very much)
