I love emergent strategy games. The game inherently changes depending on the decisions and choices the player makes. Civilization is a great example of a game that weaves a different narrative every time you play, shaped by your actions and the unique environment that evolves alongside the civilization you build. I never played an extensively long Civilization game, but it is really impressive that the game can retain character and some sort of balance even after years in a single match.

I've never actually finished a game of Civilization. Of course, I'm talking about the Avalon Hill board game, not a computer game, but there's something sinister about the idea that a game of civilization should end at all.
