95% of the world's bourbon is made in Kentucky?

I know nothing about alcoholic beverages, but ... why is a drink with a French name created almost entirely within a single US state?

Is it Cajun or something?

Puppy, from my trips to the Kentucky Horse Park, I'm remembering them saying that bourbon is so common there because they were trying to make whiskey in wooden barrells during prohibition, and it didn't work right.
