5e will make the network gigabit capable. 6 will allow it to transmit slightly better and eventually be upwards-compatible. Either will do fine, but consistency in the wiring is a plus (no mixing).

As a bit of background I'm trying to source the network cabling for our new campus where we need to have gigabit to the destkop as we're doing video editing. Thanks for the link.

You mean you're trying to guess which cables are which, or trying to find the best reasonable cost solution? If it's the latter, then you won't find much difference between the two. If the former, you're in for a painful time.
