I'm a simple guy. When I make spinach dip, I use the recipe on the Knorr (I think) soup mix package.

1 cup chopped fresh spinach 2 cup plain yogurt (if you have time strain it to make yogurt cheese for a firmer dip) 2 teaspoons salt 1/4 teaspoon fresh parsley 1/3 cup grated parmesean 3-10 cloves garlic, crushed or minced (I make things very very garlicky, anmd my garlic press is my most important kitchen tool)

Dan Raven award winning cheaters Spinach dip.
1/2 cup Miracle Whip (its sweeter than real Mayo) 1/2 cup Sour Cream (and not that tasteless "Lite" stuff either) 1 container frozen spinach. Hey its cheap. 1 Package Hidden Valley Ranch Dip
Mix it all together.
Its best if you let it sit over night in the fridge.

Dan and Primal Curve had it nearly perfect, except it's worth cleaning and sauteing fresh spinach.
I use a glob of Hellman's mayo, a bigger glob of low-fat sour cream, onion or leek soup mix, and as much spinach as I can cram in.
What's much more important is the type of bread you serve the dip in. Good ole fashioned sourdough is a good choice, since the crust stays crusty and the inside is nice and soft.

This is a favorite of my group of friends. It's super, super easy but tastes great:
2 packages of Hidden Valley Ranch Party Dip Mix - Ranch Flavor 2 10 oz packages of Frozen spinach 8 scallions 2 pints of Breakstone's Sour Cream
Chop scallions fine. Thaw spinach by rinsing it in hot water in a sink with a colander. Chop spinach. Mix Sour Cream with dip mix. Add scallions and then spinach. Mix well.
