As my husband and I are planning our move from Utah (Provo) to Oregon(Portland area), we're considering making the trip in a car or truck. We could do it all in one day and it would take 12-13 hours or so. However, since we have time, we thought it might be more fun (and less stress) to split the trip into two shorter days. If we did that, we'd like to stop at some place(s) of interest along the way. Any ideas of places to see along the way?

You may want to consider driving to L.A. then taking Pacific Coast Highway all the way up. It's a great way to see the coast.

You are traveling with a baby, are you not?
My experience with long car trips with a < 1 year old is that the amount of extra time you need to stop in order to feed and comfort the baby will make what would have been a 6 or 7 hour drive for adults much longer. In fact, I suspect that your two days will be pretty full with just getting the required miles in and the needed sanity breaks without scheduling any sightseeing.
If you can find scenic and comfortable places to stop where you can just sit and nurse the baby and rest that would be great, but I wouldn't plan anything too active unless you decide to break the drive into three or four days instead of two.

I definitely want to do that someday.
This trip though, we'd like to keep it to something roughly along the way. (I know, what is there really in Idaho? )

This sounds perfect. I guess what I was really asking is if anyone knows about any tiny little places like this or funny points of interest (world's largest potato?) along the way.

Although when driving during baby's normal sleeping time you can go a lot further between stops. You could try driving from 6pm to midnight and then sleep in and spend the afternoon sightseeing and then drive 6-midnight again.
We did 7 or 8 400+ mile trips when John was less than 1 and one 5,000 mile trip when he was 10 months. We had fun, but it consistently took longer than we thought it should to cover the milage we allowed for each day.
