I've been living/workng an insane schedule lately. When I came home from work tonight, I wanted something yummy, and pancakes it was. I haven't had them in ages -- I never make them for breakfast because they send me into carb coma. But seems a perfectly appropriate snack at 2am!

Umm, mmm! Lotsa butter. Maple (flavored) syrup. Yumm.
