I guess the question I have is, after the words 'he continued' does the word 'They' need to be capitalized or not?

Yes, because it is a new sentence within the dialog. And if you're referring to Earth, the planet, you should capitalize that too.

Prescriptively, the Sun is often capped when its usage is as a proper noun in formal U.S. English dialects. Same with the Moon.

I agree with aspirit "the sun" "the moon" etc in many contexts wouldn't, in my experience, generally be capitalized. I personally feel that when it comes to the capitalizing/proper nouning of certain things (such as was discussed recently about the word "god") is often largely a matter of viewpoint, emphasis and stylistic choice.

Yes the, "he continued" is unnecessary. We know that it was him that continued so long as you follow the rules of dialog and keep it in the same paragraph. Or if you wanted you could phrase it something more along the lines of
His face animated as he continued. "They were filled . . ."
or
His face animated. "They were filled . . ."
Either way, it would probably be better to have a period at the end of the interluding sentence instead of the comma.

Technically, extrinsic is correct. The name of our sun is "the Sun" and the name of our moon is " the Moon". The determining factor is a matter of use in terms of identifying an object or in naming specific celestial bodies. Some choose to use "Sol" and "Luna" respectively, but currently these are not their official names. In this specific instance I would expect some authorial latitude because "Sol" would not be easily interchangeable with "sun" in relation to how it was used.

And yes, you should capitalize "They" either way you slice it, because "They" starts a new sentence within the dialogue.
