My department is having a potluck this Tuesday.
My advisor is on a very low sodium diet. No sushi because the rice has too much salt, etc.
What can I make as a main dish that she would be able to eat and also wouldn't taste horrible? I was thinking that maybe I could make a low sodium and a regular version of it.

I dunno about you, but darn near everything I eat nowadays seems way too salty. So while I don't need to cut down on sodium, I'll probably soon try the recipes linked to below.

BTW: I useta go to an excellent Ethiopian restaurant which specialized exclusively in vegetarian cuisine. And the owner kept no salt and no baking powder in the kitchen or in the establishment, except for scrubbing up pots and pans and cooking utensils.

Unless a recipe calls for salt in order to make the chemical reactions go right (e.g., some types of dough), I think you can make pretty much everything as a low sodium alternative.
If the person likes spices other than salt, you can still make it flavorful with things like ground pepper, garlic, curry, cumin, jalapeno, cayenne, etc.
I don't really miss salt that much because I season with other things I like better.

Of course, you'll want to avoid high-sodium foods like meat, canned foods (except for the low-sodium versions), certain fruits and vegetables...
