I read the first book when it came out and it didn't do anything for me. Then last week, I bought book 7 for my girlfriend and decided to try again. Over the past week I read the series, and finished 7 a few hours ago.
Rowling just seemed to get better as a writer, and the story got more interesting, as she went along.

1 has to go somewhere else entirely. It might not have been the best book, but I enjoyed it so much because it introduced me to the world.
