This idea is acutally nothing new. What is new is the software implementation they mention in the article.
People at SIGGRAPH have been presenting on biophysics-based modeling, simulation and animation for at least the last decade. Game companies have flirted with some of this and implemeted portions of it on a limited level (think ragdoll simulations in most FPS's), but there are usually a lot of more effecient short-cuts that fake some natural behaviours without the complex simluation.
That being said, it would be wicked cool to see games using this level of realism in thier simluation. And maybe a bit disturbing.
