I wanted to let you in on my supreme enjoyment of homemade turkey soup....who knew that a left over turkey carcass could turn into something so good???
Mmmmm.
(What else can you do with a turkey carcass?)

So far this year I have made turkey soup, creamed turkey served over leftover stuffing, and turkey sandwiches. I still plan on turkey tetrazinni and maybe turkey/butternut squash lasagna.
I've also made potato pancakes and shepherd's pie with the leftover mashed potatoes.
Being the host for Thanksgiving dinner is a good thing.

My dad makes a great post-Thanksgiving turkey soup with amazing hand-rolled whole wheat noodles. He didn't make it until the day after I left though, so I didn't get any this year.

I made some turkey stock from the left-over bones, which turned out very well, and then made some home-made cream of turkey wild rice soup the next day.
The following day I made a home-made Turkey pot pie, including french pastry for the crust.
Of course there were the obligatory turkey sandwiches, etc.
I'm all out of turkey leftovers now and that makes me very sad.

Yeah...pot pie is one of the ultimate comfort foods. I tried a recipe out of this book: Ready When You Are
It was fabulous. I've enjoyed many other recipes out of this cookbook. Ie. The Tomato-Thyme Strata recipe has now become a regular breakfast event in my home.

This year and last, I got a smoked turkey. Because of this, if we do have leftovers they're gone in two days as we take every chance available to gnaw on the delicious carcass.
Mmm.... smoked turkey. Too bad I don't have any left.

I thought it was just one of those things you threw together with the leftover pie crust from the Thanksgiving pies, the leftover turkey, and the leftover mashed potatoes, with whatever else you felt like putting in for good measure.

No. Pot pie. Shepherd's pie is made of lamb and topped with mashed potatoes. Pot pie has two crusts.
I'm just saying it's not something I'd ever thought of using a recipe for, that's all. It's an interesting idea.
