Rinse well. Chop into smallish pieces (1-2 thumbnail-sized), dry pretty well with paper towels. Dredge in a mixture of flour with salt & pepper. Fry in olive oil (or schmaltz, if you have it) until lightly crispy.
You can also make chopped liver to serve on melba toast -- very good. Take the above fried chicken livers (not too crispy, mind, if you are using them for this) and grind together with some hard-boiled egg and sauteed minced onion. Add a little rendered chicken fat as needed to make a pate consistency, then season again with salt and pepper to taste. Serve as smallish dollops on a nice dry bread.
Note: I am not Jewish, nor am I trained in the sublime art of Jewish culinary tradition. However, I've had me some good chicken livers in my time, and I strive to replicate as best I can.

The bad news, I enjoy the occasional fried chicken liver, but these are leftover bait my son was going to use to go fishing. Since its not good enough for the fish, I get to eath them.

Hmmmm. Dan_raven, I would advise against eating them if they are not fresh. Unlike waiters and used car salesmen, liver seems to benefit from an excess of freshness.

Agreed! The day I learned to be able to sit at the same table as people consuming chopped liver was the day I knew I was all grown up. Thankfully, these days that forbearance is not frequently required of me. (I never make or serve them (nor will I!), and my mother is kind enough not to serve them (usually) when I visit.)

My Mama makes the best fried chicken livers! Oh, now I gotta call her and see if she'll make some this week! I love them as long as I don't look at them after I bite into it. Same with oysters, they just skeeze me out that way but man are they tasty!
