Nope, just my continuing experiments with fudge.
I decided to try a variation on the recipe my mom always used when I was growing up, with Hershey's cocoa (instead of the baking chocolate I've been using in Good Eats recipe I tried the last few times). But it turned out the only cocoa we had was "special dark." I thought, well, cocoa is cocoa, it's not like it's sweetened anyway. But this really is dark. As I was beating it, all I could think was "ewww, prehistoric animals could drown in this stuff."
It actually came out pretty good. Every batch I make is getting progressively creamier and less grainy. But this would definitely be a specialty fudge; people just aren't looking for such a dark flavor in a fudge. At least I'm not. But it's interesting, because it's creamy and not bitter like regular dark chocolate candy bars are.
