I've spent about an hour mucking around trying to find a definitive answer on this one:
If I get an xbox 360 core system, can I just whack any compatible 2.5" SATA drive in the chassis? Will it be formatted by the system and can I download the free original xbox emulator?
I know that if you're buying a 360 it makes sense to get the full system rather than the core. I might be getting this as part of a whacky deal where I'll essentially be getting it for free - but the supplier only stocks the core system.

No. The drive is actually in a separate enclosure that clips onto the side of the system. As far as I'm aware, your only option is to buy the 20GB hard drive from Microsoft. On the other hand, if you get the Core for free, that's still a lot cheaper than buying the full system.

This seems like a good place to look. That said, I came across this site in a google search, so I have no idea how good it is. From a quick glance, the site seemed ok though.
