I actually only ever use one recipe. Shortening cut into flour, salt, etc.; add one egg, lightly beaten, vinegar, and ice water, and combine by hand. Mmmmm. (The actual recipe is up on the Jatraquero recipe site if anyone wants to see the real directions.) It's what I grew up with and everything else tastes just, well, wrong to me. It is flaky, soft yet crusty on the top, just wonderful. But this means that I just don't do store-bought crust, even frozen.

Yeah, it's pretty grody. I like it very fresh and ripe, preferably grilled, but anything other than that, including juice, makes me gag.
