So far, the only two albums I've heard really worth listening to are Girl Talk's Feed The Animals and Bash Bros. The Black Chronic... but they're really worth listening to. I prefer them to the originals.
Feed The Animals is pretty famous, and you've probably already heard it or of it. It's far and beyond the most masterful remix I've ever heard, and I doubt I can say anything about it that hasn't already been said. If you haven't listened to it yet, go do it.
The Black Chronic is way more obscure, but simply INCREDIBLE. The Bash Bros. took Jay-Z's lyrics from The Black Album and layered them over Dre's beats in The Chronic (with some overlap with other albums for both rappers), and now I prefer this over either album alone. It's hard to find out there, so let me know if you need me to send it to you.
Are there any others out there I'm missing out on? These two albums are critical in my collection nowadays.

Reanimation is the only remix album I can think of that I even sort of like. Usually I really, really don't like remixes.

I hate to be the dictionary Nazi, but Feed the Animals isn't a remix album, it's a mashup album.

If you like Feed the Animals, check out Night Ripper. It's my favorite Girl Talk release.
Check out the Kleptones. They release all of their music free on their site via direct download or torrent. I recommend their album "24 Hours". It has a track mixing The Cure, Simon and Garfunkle, and Asheru together. It's an absolute joy to listen to.

The Grey Album by DJ Dangermouse is a mash-up of The Beatles White Album and Jay-Z's Black Album. It's really well done and got a lot of press when it was released (not officially due to copyright reasons).
I'm also a fan of Legion of Doom. They mash-up mostly punk/emo/indie-rap bands.
